Winter Fruit Salad


  • 200g dried figs
  • 100g dried peaches
  • 100g dried pears
  • 100g dessert prunes, stones removed
  • 2 cups water
  • 1 cup apple cider
  • ¼ cup raw sugar
  • 1 vanilla bean, split lengthways


      Place figs, peaches, pears and prunes into a large pan. Combine water, cider and sugar. Pour over fruit and add the vanilla bean. Pour over fruit and add the vanilla bean.


      Bring slowly to the boil, reduce heat, and cover and simmer until fruit is tender (approximately 30 minutes).


      Allow to cool to room temperature before serving. Remove the vanilla bean just before serving.


      This salad may be kept for 2-3 days. May be served with yoghurt or cream.


      Serves 4-6
