Cheese and Vegetable Balls
- 2 zucchini, grated
- 1 parsnip, peeled & grated
- 1 carrot, peeled & grated
- 1 capsicum, seeds removed and diced
- ½ cup grated Swiss cheese
- ½ cup grated parmesan cheese
- 1 tablespoon chopped parsley
- 2 eggs, beaten lightly
- 1 cup dry breadcrumbs or stuffing mix
- salt & pepper to taste
- butter or olive oil for frying
Combine vegetables, cheeses, parsley, eggs, crumbs and seasoning.
Shape into small patties and fry for about 2 minutes on each side in oil.
Serves 4.
