Cheese and Vegetable Balls


 

  • 2 zucchini, grated
  • 1 parsnip, peeled & grated
  • 1 carrot, peeled & grated
  • 1 capsicum, seeds removed and diced
  • ½ cup grated Swiss cheese
  • ½ cup grated parmesan cheese
  • 1 tablespoon chopped parsley
  • 2 eggs, beaten lightly
  • 1 cup dry breadcrumbs or stuffing mix
  • salt & pepper to taste
  • butter or olive oil for frying

 

Combine vegetables, cheeses, parsley, eggs, crumbs and seasoning.

 

Shape into small patties and fry for about 2 minutes on each side in oil.

 

Serves 4.
