Tomato and Rice Casserole
- 1 lb uncooked rice
- 1½ lb to 2lb tomatoes (cooked)
- 1 large onion (diced)
- ¼ lb cheese (grated)
Boil rice. Fry onion in olive oil. Add tomato, rice and some of the grated cheese and place in casserole dish. Combine cheese and breadcrumbs and sprinkle on the top of mixture with a dob of butter. Brown in moderate oven.
